Makeup Bacon and Cheddar ahead Burritos
I know it's time to stock my freezer with breakfast burritos when my kiddos and I we drive towards Tim Horton through more than once in a week for breakfast. As much as I like to say that we relaxing morning "Kumbaya" in which all wake up, stretch, take green tea, and then listen to the music of meditation as we head to school ... we do not. To say ah! Far from there. It's more like an episode of Dance Mum I'm where Abby Lee Miller screaming like crazy and my children are moving slowly or not at all camera. Please tell me how a child can spend 20 minutes in the bathroom, another 15 minutes in his room, and then come down without socks. Seriously, I go crazy. Anyway, I strive to keep my mornings sending me to the madhouse. I wrote a bit about my nightly routine here . Another thing I do, when time permits, is Stock my refrigerator and freezer with food for breakfast. If I do not definitely going to the unit through which I do not like for 3 reasons. 1. It is not healthy. I do not care if it's just eggs, bacon and a muffin. 2. It is expensive. 3. I write this blog you here talking about make-ahead meals for a life incredibly should probably follow my own advice. I'm just saying. But I'm human. My children are animals. And cave if you do not prepare in advance.
Hence, the breakfast burritos. My only rule is sausage and egg recipe I made years ago . But I'm not a big fan of breakfast sausage. I do not get is delicious, but when it comes prefer bacon sausage. So since I am the cook in this realm I decided to exchange bacon sausage and create a similar but slightly different make-ahead breakfast burrito.
While preparing a group for the freezer could not help but wonder why I do not do this more often - they are so easy to make and absolutely delicious
I brought together 18 eggs. Yes, you can use some egg whites. Yes, you can use egg beaters. I like all the eggs and for some reason have a problem with egg yolks pull out. But if you want to reduce the fat a bit then use 1/2 egg whites.
After the eggs were brought together I rummaged in Greek plain yogurt, sauce and seasonings. I've become quite obsessed with Greek yogurt usual in my years of blogging. It is a staple in my house and I seem to use it in everything from muffins to casseroles. a sensitivity in baked goods, pasta dishes creaminess and the casserole is created and maintains the moist and fluffy eggs. I love it! Greek yogurt used in this recipe to keep moisture eggs, which is useful if you decide to keep the burritos in the refrigerator and / or freezer.
After the ingredients to the egg mixture is poured into a large deep skillet and cook over fire stirred together over medium heat . Be sure to stir constantly until it begins to set. If they do not and have the fire can burn up eggs.
Separation and stir while cooking eggs. Cook until set and fluid is absorbed.
Add cheese and crumbled bacon. I cooked bacon ahead of time in the oven. This is the easiest way to cook bacon and can be done ahead of time. Never cook the bacon on the stove. Especially since I have fear of losing an eye popping bacon fat.
After the burrito filling cools a bit I went ahead and assembled my burritos. Used flour tortillas. Yes, you can use wheat, corn, or whatever. We prefer the flour so that's what happens to me. It makes no sense to no one eats 15 burritos. Saco about 1/3 cup filling burrito in the center of the flour tortilla.
Then fold.
and wrapped in foil or plastic wrap. If you will heat up in the oven these I say use sheet. I used aluminum because I ran the plastic wrap. I heat mine in the microwave so obviously I'll remove it before starting.
Then store them in a plastic bag, labeled and put it in the freezer.
Heat these burritos until I recommend taking the night before. It is not absolutely necessary but it makes it easier. If you're going to heat it in the oven then keep the burrito in foil and place in oven at 350 degrees for 20 to 25 minutes or until hot. To heat in the microwave to remove foil or plastic wrap and place in the microwave with a cup of water. Water does not allow to dry tortilla.
Enjoy your breakfast burrito! These are better and cheaper than any breakfast burrito you get at a drive through.
