The minestrone soup recipe Mighty
Have you ever been to an Italian restaurant wondering what order and I did not know exactly what was on the menu? And the word "minestrone" sound familiar? Do not? Shortly later we will together discover little secrets of cooking famous Italian chefs (aka mamas mine ') and try to re-create a sense of homemade soup with a light touch staff.
What is the minestrone soup
According to Wikipedia, minestrone is a creation of Italian cuisine based in seasonal vegetables and meat. It is basically a good full meal and can be seen as comfort food. The word itself potentially has 2 meanings Latin origin:
Minestra, which means soup or minestrare, which means "to serve".
How to make a traditional minestrone soup famous ?!
Traditionally, minestrone soup can be prepared with chicken, beans or meat broth and can be thick or broth-like clear consistency, with big chunks of vegetables, meat and pasta or rice.
There is no fixed recipe, but rather regional variations of the soup that can be meat or vegetable based. Usually, the soup is full of vegetables, beans, meat and various types of herbs and Mediterranean spices. Variations of the famous soup can be prepared with meat balls, zucchini, squash, kale or seasonal vegetables available.
my own Italian recipe Rhapsody Mighty minestrone
Ingredients:
- 2 carrots
- 2 onions
- 1 tomato
- 4 potatoes
- 1 can of brown beans
- ½ of a celery stock
- 3-4 cloves garlic
- 2-3 bay leaves
- 200 g of precooked pasta (macaroni, rotini or other pasta)
- 2-3 tablespoons of olive oil
- 1-2 tablespoons of bouillon powder or salt (based own taste)
- ¼ teaspoon dried oregano
- ¼ pesto sauce
- Ground black pepper (based own taste)
- 200 gr cubed chicken breast
- 1 l of hot water
Preparation:
precook the pasta (you can make a choice of any type of pasta, but depends on taste). Cut the onions, tomatoes and carrots in larger, after having washed pieces. Peel the potatoes, wash them in cold water and dice into smaller pieces. Do the same with the celery broth.
Put the olive oil to heat, after you have washed, dried with a kitchen towel and diced chicken breast. When olive oil enough (make sure it is not burning!) Is heated, put the chicken in the pan and saute quickly, adding bouillon powder or salt (please be sure to use less than the recommended amount of bouillon powder or salt if you have high blood pressure or are trying to avoid salt altogether!).
When fried meat seems to some extent (5-10 minutes to fry), start adding the pre-cut vegetables (onion, carrot, tomato, potato, celery) and enter spices and herbs like pesto sauce (fresh basil is also an option if you have it in your herb garden, in this case, it is better to put the basil near the end of the cooking process). Bay leaves can also throw in at this point.
Open brown beans and put in the cooking bowl, add black pepper (freshly ground black pepper is more advisable because it has a more intense flavor). When all ingredients are well mixed in, start adding water. So let everything cook for about 30 minutes or shorter / longer (to be more precise, until vegetables and meat are cooked and tender).
Just about 10 minutes before finishing his soup, add the cooked pasta. Mince the garlic and add to the soup with dried oregano. Check again if additional soup spices are needed and adapt to your personal taste.
option is being generous (up to only a certain extent, View account the calories!) With your meal and add some grated Parmesan cheese soup; You can also serve the mighty minestrone with some garlic skewers topped with ham and goat cheese shavings. And, of course, when completed soup, enjoy the taste of Italy with your favorite wine and some music Eros Ramazzotti!
Buon appetito!
