I'm obsessed with ranch seasoning mix. I love in my Buffalo Chicken this ranch chicken pasta , and now it is season I decided to make a grilled chicken adobo with her. Sip!
However rather than simply spray some over my chicken seasoning and roast until I decided luxury in a bit with a little garlic and lemon. Oh mama! Ranch, garlic and lemon! Yes please!
This marinade is so easy and can be done ahead of time. All I did was take 2 tablespoons ranch seasoning mix (my favorite is Simply Organic ) and mixed with 1/4 cup olive oil 3 cloves garlic, lemon juice and zest and a couple of tablespoons of parmesan cheese. Before pouring the marinade on top of the chicken give you a taste for salt. Depending on the package seasonings that may or may not be necessary to add salt. If you add about 1/4 to 1/2 teaspoon salt.
A quick note about garlic. I recommend grate your garlic. This makes a paste and marinade is given more than one flavor of garlic. I use a grater to do this.
Then I put 4 chicken breasts (about 4 ounces each) in a freezer bag gallon and the marinade over the top is poured. This marinade is thicker than a typical of what then poured over the chicken you need to crush around until covering all the chicken marinade. Then let it rest in the refrigerator for 4 hours or overnight. I think that time can let the meat marinate, the better.
In fact, I froze prepared and this ahead of time. I took the chicken out the day before we go to the grill and let it thaw in the refrigerator. Making marinades ahead is one of my favorite ways to stock my freezer. It is very easy and you can have a lot of ready for freezer in minutes healthy dinners.
Then grilled chicken over medium heat for 5-6 minutes on each side or until cooked through was. If you do not have a grill you can use a pan grill .
Serve this delicious salad Greek quinoa or Asian pasta salad . Yum

ingredients
- 2 tablespoons of mixture of ranch seasoning
- ¼ cup oil extra virgin olive
- 3 cloves garlic, grated
- 2 tablespoons grated parmesan or Romano cheese
- juice and zest of 1 lemon
- ¼ - ½ teaspoon salt (optional)
- 4- (4-ounce) boneless skinless chicken
instructions
- in a small bowl whisk together the seasoning mix, olive oil, garlic, cheese, lemon juice and lemon. Taste for salt and add if necessary.
- Place chicken in a bag or in a bowl and pour the marinade over the top. Move the chicken around until all the marinade is coating the chicken. Let stand for 4 hours or overnight.
- grill over medium heat for 5-6 minutes or until chicken is cooked through.

chicken can enter the marinade until 2 to 3 days in advance or frozen in the marinade until 3 months ahead of time. Take out the day before and let the chicken thawing in the refrigerator
