Method

  1. Place the onion, fennel and celery in a large skillet with a little olive oil, ginger, garlic, chili chopped stalks of basil, coriander seeds and garlic and season with salt and black pepper 1 tsp.
  2. simmer, cook for about 12 minutes, until vegetables are tender, stirring occasionally.

  8. Cool in the fridge and enjoy. This recipe for tomato sauce can be bottled in sterilized jars and held for a maximum of 6 months in a cool, dark place.
