has always liked fresh salads, but as my good friend Anika, not me evergreen love. I never feel satisfied after eating. Instead, I like salads with strong flavors, a little contraction and a whole lot of chewing. This curry salad is the perfect fit that criteria. The flavors are bold, the shrinkage factor is definitely there, and pairs well with grilled fish, chicken or salmon. It literally takes minutes to prepare quickly and free of dairy and gluten. Enjoy!
Yield: 4 large salad
Ingredients:
- 12 ounces grated cabbage organic
- ¼ cup seedless raisins
- ¼ cup sunflower seeds raw salt
- ¼ cup raw cashew butter
- lemon juice ¼ cup
- 1-2 tablespoons of curry powder
- 2 tablespoons agave syrup
Instructions:
- Combine coleslaw, raisins and sunflower seeds in a large bowl. Set aside.
- In a separate bowl, mix the butter cashew juice, curry powder and lemon and stir to mix. (You may need to add some water to dilute a little down). Add to cabbage mixture and stir to mix.
- Let stand in the refrigerator to cool before serving
