Ingredients:

  • 30 grams (1 ounce) mixed in dry conditions
  • algae
  • 1 tablespoon + 1 teaspoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon unrefined sugar (can substitute a 1/2 tablespoon agave)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon ginger juice
  • 1 tablespoon toasted sesame seeds
  • 1 green onion, finely chopped

Directions

  1. Put the dried seaweed in a large bowl and fill with cold water. If you like crispy seaweed, soak for 5 minutes, if you like more tender, soak for 10 minutes.
  2. To make the dressing, mix rice vinegar, sesame oil, soy sauce, sugar, salt and ginger juice in a small bowl and mix.
  3. Drain algae and use your hands to squeeze out excess water. Wipe excess water into the container, and then return the seaweed with sesame seeds and dressing. Mix well to combine. Plate of salad and garnish with chives. (3)
