Who does not like chocolate? Okay, some people do not, but most of us! This protein bar protein provides an impressive hit, but still healthy and nutritious. In fact, I'd say it's a better bar that almost all are for sale at the supermarket. ! Easy to make and very tasty - this bar is hard to beat, but not difficult to eat

Ingredients - M AKES twelve-bar:

1 cup oatmeal

½ cup chocolate protein powder (available at Amazon.com )

¼ cup cocoa powder (certified organic cocoa powder in Amazon.com )

1 cup dates, pitted and soak for 30 minutes

+ ½ cup ¼ cup chopped pecans, divided

½ cup + ¼ cup flaked coconut, divided

1 teaspoon vanilla extract

½ teaspoon salt

water as needed (up to ¼ cup )

2 points tablespoons cocoa or chocolate chips

Directions:

1) in a food processor to grind the oats until they are a fine flour. Add protein and cocoa powder and mix again until well combined.

2) Drain and rinse dates then add them to the food processor along with ½ cup walnuts, ½ cup coconut, vanilla and salt shredded. Mix again, adding a little water at a time, until a dough forms.

3) Transfer dough to a bowl, mix in the remaining ¼ cup of pecans and coconut along with 2 tablespoons cacao nibs or chocolate chips.

4) Scrape the dough onto a sheet of parchment paper or silicone baking mat. Cover with another piece of parchment paper and roll bars to about ½ inch, shaping a square while rolling.

5) Place the bars in the refrigerator for 2-3 hours, allowing them to firm up before cutting into 12 equal parts. Sprinkle the remaining nuts over the top of the finished bars

6) Refrigerate for 5 days or a month in the freezer
