Peas and celery soup
Peas, the main ingredient in this soup, are very rich in vitamin C and also contain a good amount of protein. For this recipe, you can use frozen peas as easily as making fresh peas is super (or should be that "Souper!") Easy to do.

Ingredients - eight servings
1 tablespoon butter

1 medium onion, chopped
1 stalk celery ago chopped

2 cloves garlic, minced

6 cups of peas, fresh or frozen
1/2 cup water
4 cups reduced-sodium vegetable broth
1/2 teaspoon salt

Method
1. In a heavy saucepan, heat the butter and oil over medium heat until butter is melted. Add the onion and celery; cook, stirring occasionally, until tender, 4 to 6 minutes.
2. Add the garlic and thyme (or parsley); cook for about 10 seconds.
3. Mix the peas. Add water and bouillon; bring to a simmer live high heat. Reduce heat to maintain a simmer and cook until very tender alive, about 1 minute.
