Tomato soup
tomato soup is a classic of all time that goes perfectly with a sandwich grilled cheese. Nourishing, nutritious, filling, but very low in calories, tomato soup is simply amazing! Tomatoes are full of lycopene, a nutrient known for its' antioxidant properties and fight cancer. As super-foods go, this tomato soup is hard to beat
- Ingredients. 8 servings
1 tablespoon butter
1 additional tablespoon extra virgin olive oil
1 medium onion, chopped
1 stalk celery, chopped
celery Bunch
2 cloves garlic, minced
1 teaspoon chopped fresh thyme or parsley
1 28-ounce can of whole peeled tomatoes, juice
1 14-ounce can of whole peeled tomatoes, with juice
4 cups of vegetables
1/2 teaspoon salt
freshly ground pepper ground broth
to tasteMethod
1. heat the butter and oil in a heavy skillet over medium heat until butter is melted. Add the onion and celery and cook while stirring occasionally until softened -. About 4 to 6 minutes
2. Add the garlic and thyme (or parsley) and cook, stirring, for another minute.
3. Mix canned tomatoes (with juice). Add broth; bring to a simmer over high heat. Reduce the heat to maintain a simmer and cook for 10 minutes.
4. Puree the soup in batches in a blender, the model I use and blenders less than $ 200 . Add salt and pepper to taste.
