May is already here! Woohoo! This is an exciting time for us Buffalonians. Means that survived another winter and lazy summer days are just around the corner. Bring in swimming, camping, sitting on the porch, running outside and just enjoy the hot and humid days of Buffalo. Okay ... I refer back to this post at the end of July, when I complain about my hair out frizzin moisture. Right now I'll just pretend I love it because I am sooooo sick of the cold.
Now winter for many of you said goodbye months ago. But in my neck of the woods snow only a few weeks ago what most of us still have our winter jackets fingertips. Now, I would not say exactly warm and sunny, at this time, but the snow has left us, so it's time for the thick layers of go into hibernation during the summer.
May is also a good time to get back on track with diet and exercise goals. It's been 5 months since we announced our New Year's resolutions weight loss for the world and a month before summer officially arrives. This creates the perfect "I need to refocus" storm.
Speaking of May, returning to action, and Buffalonians are holding our first workshop organized skinny on May 15 at the Hotel Millennium (right next to the Galleria mall) . To accommodate the schedule will all have the same workshop on four different occasions.
During each workshop will get my best way to tip step in preparing snacks and healthy meals for the week in one afternoon, tips to lose weight, motivation, and my favorite easy to prepare recipes in advance.
Then he will take care of Melissa and show you the best way to create a home exercise routine that gets results! Bring your sneakers because you want to get up and move.

The fact that I write this blog does not mean you have this weight loss journey thing all figured out. I still struggle with my weight. In fact, I think I'll gain weight easier than anyone on this planet. Seriously. Some weeks I is a running machine and completely focused on beaten and quinoa. Other weeks you can not get enough of chocolate on my system. I would like to think I've found the perfect balance between performance and chocolate, but I'd be lying if I said I was not frustrated by the scale or the way my clothes fit times. I do. However, I have learned to gain back a few pounds is part of the process and journey..at least it is for me. I am not one of those people (like my sisters) you can eat a box of macaroni and cheese every day throughout their teen and adult life and never gain a pound. Well I'm not the opposite. My back gets bigger smell the chocolate chips. Haha! #TRUTH
But go ahead. I get back on track and do what I know I have to do to stay healthy and fit. One of the things I do that makes a sound "easier" life to me is eating plan and preparation. Both intentional keep me with my food. I'm not saying I always make the healthiest choice but to have healthy food ready to eat in my fridge certainly makes it more likely that I will.
feel I was a little tangent here, but I guess I needed it. I really do not think or plan before writing my post weekly meal plan as I do with my other messages. For this post I just kind of write from the sleeve on where I am with my weight loss goals and share my thoughts on my weekly meal plan. I hope it is useful to see I'm just like you. Fight Like everyone else on the planet.
Well let's get to my eating plan.

This week I am still eat the food that I have in my fridge, pantry and freezer. I have a lot of food and random ingredients they need exhausted.
Check out my freezer! These food preparation containers have either chicken parmesan, Mexican rice or Mexican quinoa in them. I'm still working on those recipes, so I have no links to share the moment. Containers have GladWare oatmeal in them. Oh, and there are jars par Mason in the back corner with Pasta Fagioli in it - we're eating for dinner tonight
also I have tons of vegetables in my refrigerator to be used before spoiling. I decided to roast a lot of them for a roast vegetable and feta salad quinoa. This is very good. most likely I do it again so you can write up to post here. All I did was to mix together a couple of tablespoons of olive oil, 1 tablespoon balsamic vinegar, 1 clove garlic (grated), a little thyme and sprinkle over vegetables. I baked at 400 degrees for 25 minutes. Then, then he cooled mixed with 1 1/2 cups quinoa and some feta. Super YUM!
With the rest of the vegetables and quinoa salad I made a black bean class. This is really good and definitely will write up for you. All these ingredients (black beans, quinoa, peppers, olive oil and spices) I had on hand. This is a food pantry at its best.
Oh, and I created these packages homemade trail mix. I used 1/4 cup cashews, 1 tablespoon dark chocolate chips and 1 table spoon craisins. He had a mid morning snack today and totally hit the spot.
