Summer is fast approaching and with her barbecue season . Perhaps you are already looking for some proper meals and side dishes. Today, we have a recipe for quinoa salad with fruit flavor that is sure to thrill you and your guests (including meat lovers!). The fresh orange harmonizes with spicy sweet corn and red onion. A taste sensation guaranteed!
Ingredients for a large plate (for about 4)
- 180 g quinoa
- 2 organic oranges (peeled and cut)
- 1 red pepper (diced)
- 200 grains g kidney
- 100 g of corn
- 1 red onion (chopped)
- 2 tbsp. chopped cilantro / coriander
- salt and pepper
Dressing Ingredients:
- 40 ml of olive oil
- 50 ml apple cider vinegar
- 50 ml of orange juice
- zest of 1 organic orange
- 1 tbsp. agave syrup
Directions:
Cook quinoa according to package directions in water twice for 15-20 minutes and then allowed to cool. Combine oranges, diced pepper, beans, corn, onion and cilantro.
Mix dressing ingredients and pour over quinoa. Combine everything together and mix well before serving! Enjoy your 😉 Salad
