1 teaspoon coconut oil (for cooking)

Directions

  1. Place a small sweet potato on a baking sheet and bake at 400 degrees for about 45 minutes. If you're short on time, you can microwave for 6 minutes (baking produces a bolder flavor).
  2. If you do not have brown rice on hand, cook some up, or use one of DIY freezer bags of brown rice at hand. If you ran out as I did, use something like frozen rice over from Trader Joe's.
  3. In a food processor, process onion until finely chopped. Add the beans and pulse until coarsely chopped (not pureed).
  4. Pour the onion and bean mixture in a bowl. Add the sweet potato, cooked rice, nutritional yeast, garlic powder and salt. Mix well.
  5. Place a cast iron skillet over medium heat. Add the oil. Taking large spoonfuls of dough veggie burger and shape into patties 4 quarter inch thick. Use the back of the spoon to flatten and round the edges. If the pan is small, cook 2 at a time. If the pan is large, cook 4 at a time.
