Ingredients
1 small, cooked (about 3/4 cup)
3/4 cup cooked brown rice
1/4 white onion
[19459021sweetpotato] 15-ounce can cannellini beans, rinsed and drained (about 1 1/2 cups)
1 tablespoon nutritional yeast
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1 teaspoon coconut oil (for cooking)
Directions
- Place a small sweet potato on a baking sheet and bake at 400 degrees for about 45 minutes. If you're short on time, you can microwave for 6 minutes (baking produces a bolder flavor).
- If you do not have brown rice on hand, cook some up, or use one of DIY freezer bags of brown rice at hand. If you ran out as I did, use something like frozen rice over from Trader Joe's.
- In a food processor, process onion until finely chopped. Add the beans and pulse until coarsely chopped (not pureed).
- Pour the onion and bean mixture in a bowl. Add the sweet potato, cooked rice, nutritional yeast, garlic powder and salt. Mix well.
- Place a cast iron skillet over medium heat. Add the oil. Taking large spoonfuls of dough veggie burger and shape into patties 4 quarter inch thick. Use the back of the spoon to flatten and round the edges. If the pan is small, cook 2 at a time. If the pan is large, cook 4 at a time.
- these pies Cook slowly so as not to burn them. Brown each side for about 5 minutes or more. Carefully turn and brown the other side.
- Serve on a whole wheat bread with whatever toppings you choose. I used lettuce, tomato and avocado.
