Breakfast: quinoa, spinach fried eggs

Quinoa and Egg Scramble With SpinachQuinoa Egg Scramble Recipe

Ingredients

1/2 tablespoon olive oil extra virgin
1 teaspoon minced garlic
2 eggs
1 tablespoon water
Pinch of salt
Pinch of pepper
1 cup spinach
1/4 cup of cooked quinoa

Directions

  1. heat half tablespoon of oil in a nonstick skillet over medium-low heat. Cook the chopped garlic in oil for about a minute.
  2. Meanwhile, beat two eggs with low-fat milk, salt and pepper. Set aside.
  3. Add spinach to skillet. Cook for about 30 seconds.
  4. Pour the egg mixture into the pan. Let sit for about 10 seconds, then starts beating eggs quickly toward the center of the pan with a wooden spoon.
  5. When eggs are almost cooked, add the cooked quinoa to the pan. Mix in the well.
  6. Transfer to plate or bowl and garnish with sprinkle of parmesan cheese.

lunch: spinach salad with salmon

ingredients

2 cups spinach
1/4 cup of cooked quinoa
1/2 a pear chopped
1 tablespoon chopped nuts
1 tablespoon dried cranberries or cherries
2 teaspoons red wine vinegar
1 teaspoon lemon juice
1/2 teaspoon of honey
2 teaspoons olive oil
Salt and pepper to taste
4 ounces of salmon mustard maple

Directions

  1. In a medium bowl, combine spinach, pear, walnuts and cranberries.
  2. In a small bowl, whisk together vinegar, lemon juice and honey until blended, then add olive oil. Add salt and pepper to taste.
  3. Drizzle dressing over salad then top with salmon (either microwaved or cold).

cilantro 3/4 teaspoon
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups vegetable broth
1 can black beans, rinsed and drained
1 can white beans, drained and rinsed
2 medium potatoes sweet, peeled and cubed
2 tablespoons fresh lemon juice

Directions

  1. heat the oil in a skillet over medium heat . Add the chopped onion, cook for five to 10 minutes or until tender.
  2. Add the coriander, cumin, salt and pepper, mix for 30 seconds. Pour the vegetable broth, beans and sweet potatoes into cubes. Bring to a boil and simmer, uncovered, for 20 to 30 minutes, or until potatoes are tender.
  3. Set aside three cups of cooked beans and sweet potatoes. Puree the rest of the soup with a hand blender. Return the reserved beans and potatoes back into the pot, cook for another 10 minutes. Add the lemon juice. Season with salt and pepper if desired.
