Who does not love a tasty protein bar? They are great because they are easy to transport, non-perishable and require no refrigeration.
The caveat to that is that a good protein bar can be quite difficult to find. Often, so they know even remotely appetizing, artificial sugars and binders are added to the mixture which can cause some serious digestive problems later. And not only that, they are often terribly expensive.
But I've got good news. protein bars can be easily made at home in your own kitchen. By making your own, you get to control the ingredients, taste, and even the size of the portion. My latest creation then will not disappoint - it is very easy to make and use one of my ingredient favorite profiles - chocolate
Yield: 12 servings
Ingredients:
- 1 can black beans, rinsed and drained
- ¼ cup brown rice syrup
- 3 large eggs
- 1/3 cup unsweetened coconut milk (or other nondairy milk)
- ¼ cup coconut oil, melted
- 4 tablespoons mint chocolate VeganMax
- ¼ unsweetened cocoa powder
- ¾ teaspoon baking powder
- 1 teaspoon sea salt
- ½ cup (you can use nondairy carob chips)
Instructions:
- In a high-speed blender, add all ingredients, except for black chocolate chips and mix until smooth.
- stir in black chocolate chips and pour into a greased dish 8 × 8 baking.
- Bake in a preheated oven at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- let rest in the refrigerator for 30 minutes before slicing. also they freeze well. Enjoy!
