Homemade mayonnaise
Mayonnaise is rarely considered as a healthy food, but that's because the most store-bought mayonnaise is just cheap junk! Full of trans fats and other unhealthy additives, mayonnaise reason the store-bought lasts for months at a time in your refrigerator is full of artificial additives.
With an immersion blender, making your own mayonnaise is easy and much healthier than store-bought mayonnaise.

Ingredients - M AKES a Cup
- 2 large eggs, at room temperature
- 2 teaspoons freshly squeezed lemon juice (or vinegar)
- 1 cup oil of neutral taste (such as light oil olive oil grapeseed, walnut or almond oil)
- pinch of sea salt good quality fine-grained
Method
- Separate the eggs. Save egg whites for another purpose (as frosting) and place the egg yolks in a small bowl with high sides.
- Pour fresh lemon juice into the bowl with the egg yolks and beat using your immersion blender. Egg yolks contain a natural emulsifier, lecithin, which helps thicken sauces and ingredients come together.
- Gradually, a few drops at a time, pour the oil into the container while constantly mixing. Once the mayonnaise has begun to thicken, pour the oil in a slow, steady stream. If the oil begins to accumulate at all, stop pouring mayonnaise and mix vigorously until the oil has been incorporated.
- If the mayonnaise starts looking too thick, add enough water to dilute the consistency you like. Add a teaspoon of water at a time.
- Once all the oil has been mixed, mayonnaise should be thick and fluffy. Season carefully with sea salt fine grain. Add a small stream of water if a thinner mayonnaise desired.
- Store your homemade mayonnaise in the refrigerator in a covered container for 3 days.
