My slow cooker has been in full swing this year. Whether I'm feeding a crowd or prepare meals for the week ahead of time, there is no piece of equipment that comes in handy over my crockpot. This Paleo casserole overnight had become a staple in my kitchen. . . until I came across this Mexican breakfast. Gluten-free, rich in protein, and less than 400 calories, which is the perfect recipe cooked on low heat to cook Sunday afternoon, slice up, and enjoy all week. That said, this dish is almost too good to keep for yourself.
The next time you are in need of a crowd-pleasing dish, bring along this recipe. Just be sure to save a slice for yourself - it will go rĂ¡pido!
Ingredients
8 eggs
1 1/2 cups low-fat milk
1 jalapeno, seeded, cut into small pieces
1 pound bulk sausage, cooked and drained
1 red pepper, chopped
3/4 cup sliced green onions
2 cups low-fat cheese Mexican blend
cooking spray
9 corn tortillas
1/2 cup salsa, optional
jalapeno slices pickled optional
Directions
- in a medium bowl, beat eggs, milk and jalapeno with a whisk. Combine sausage, chopped red pepper, green onion, jalapeno and cheese in a separate bowl. Leave them aside.
- Spray a slow cooker 5 to 6 quarts with cooking spray. Place 3 tortillas in a slow cooker, tearing, if necessary, to cover the bottom.
- Best tortillas in slow cooker with half the sausage, peppers, green onions, and cheese mixture. Layer 3 tortillas on top, then upload those tortillas with the rest of the meats, vegetables and cheese mixture. Top this layer with the remaining 3 tortillas, tearing, if necessary, to cover mixture. Pour egg mixture over tortillas.
- cover and simmer for 4 to 5 hours or on high setting for 2 to 3 hours, or until the temperature reaches 160 ° F and the center is firm.
- Serve with salsa, jalapenos, onions, and any other ingredients you want.
