Yesterday was a strange and wonderful day. I woke up at 4:15 in the morning and headed to OrangeTheory. The training was very, very difficult. Probably one of the hardest I've done there. We started the class with a race / row and then ended up with a heavy force training. It was a great workout, but I was wiped out.

Once home, showered, dressed me, and I made breakfast before Magnolia awoke. I 2 eggs (4SP), leftover chicken sausages (5sp), and an English muffin (5sp).

Breakfast
Sunday night I took some time to organize my work week and went to work yesterday morning with considerable task list. I was ready to conquer the day ... and then my computer started acting wonky. I spent most of the morning working with the IT department to fix my computer and ended up dealing with some projects related to computers. By mid morning I had a delicious yogurt (3SP) Crunch chocolate covered with pure protein (5sp).

Pure Protein Crunch
at 12:30 I went out and ate my lunch in a garden on campus. It felt great to sit in the sun for a bit and enjoy my lunch away from my desk. For lunch, I had sauteed eggplant, it was so easy to do.

Stir Fry eggplant
-2 medium eggplants, peeled and diced
-2 teaspoons olive oil
-1 clove garlic, minced
- 3 tablespoons soy sauce
-1/2 tablespoon honey
pepper-black
-red pepper flakes (if you like spicy)

eggplant saute over medium-high in 2 teaspoons olive oil. Cook the eggplant until tender. Lower heat to medium and add garlic. Stir to mix. Then, in a mason jar or small bowl, add soy sauce, honey, black pepper, and red pepper. Stir to combine, then add the eggplant. Stir to mix and allow the sauce thickens and combine with the eggplant. Serve over brown rice (4SP) and enjoy!

Around 15:00, before diving into my latest project of the day, they had a packet of cashews flavored gherkin (3SP).

I was quite hungry on my way home, but I did not pack Any other snacks for the day. After collecting the magnolia and will take a little walk, I did Magnolia and dinner. I sauteed kale with a little balsamic vinegar, Zoodles sauteed summer squash in olive oil, and heat to another link chicken sausage (total 6SP).

Dinner
After dinner he had left 4SP, I knew I'd use to eat a Yasso Greek Yogurt Bar . I bought the chocolate cookie dough bars on Sunday, but not the output of your SmartPoints value until last night. They ended up being 5sp, so use 1 of my weekly points to end the day.

I was very happy with my diet yesterday and welfare. I have a great workout in, tracked down everything I ate, and got a lot done at work despite having equipment problems. It was a manic Monday, but the first day back after the holiday usually is!
