Whole roasted cauliflower curry
seems like its popularity will certainly increase. I have recently seen an increase in delicious recipes showing cauliflowers uses multiple facets. Cauliflower is a great alternative to the typical starch, it can be used instead of rice (eg. The raw sushi), or instead of potatoes to make mashed potatoes (I guess it would be called cauliflower puree then ... those with meal plans know what I'm talking about 😉)
This week I've put together for you a very quick recipe and easy to set roasted curried Cauliflower . Guys, it really delicious.
we have paired with a creamy, dairy Free pasta sauce sesame . The sauce can also be used as a salad dressing and ideal to put steamed green like broccoli and asparagus..so do a lot of it and keep it in the fridge ... you'll thank me later!
Roasted Curried Cauliflower
Ingredients:
1 cauliflower
coconut oil 2 tablespoons
1 teaspoon coconut cream (the solids that are in the top when a can of coconut milk opens)
maple syrup 1/4 teaspoon
juice of 1 lemon
1/2 teaspoon ginger powder
1/2 teaspoon turmeric
sea salt 1/2
1 teaspoon curry powder
1/4 teaspoon pepper
ground coriander 1/4
cinnamon 1/8
black pepper pinch of
Instructions
Preheat oven to 400C. Cut cauliflower leaves, wash and dry.
Mix all ingredients in a bowl. a paste dark yellow that looks like this will form
Place cauliflower in a baking tray.
Rub paste whole cauliflower, which should look like this:
Bake for 30-40 minutes or until a nice golden forms '' the crust on the outside.
Try to pop on the grill for the past 5 minutes for more color.
Take it out of the oven and place on a tray to rest for 5-10 minutes.
Slice, garnish with cilantro, served with sesame paste sauce and enjoy!
* Try topping Granada seeds for even more flavor and color!
Cauliflower is an ideal food for preventing cancer and have anti-inflammatory, anti oxidant and detoxifying properties. It also aids in digestive health, because it is a source of fiber.
The tahini sauce
1 cup pasta raw sesame
1 cup water (may be more or less, add up get the consistency you want)
lemon juice 1 1/2
1/2 teaspoon tamari (or a couple of pinches of sea salt)
pinch cayenne
1 clove garlic
1/4 cup parsley
Place all ingredients in blender or food processor, blend until smooth.
The tahini is a great source of calcium and healthy fats!
