Ingredients
10 Medjool dates (large and soft)
1 teaspoon vanilla
1/2 cup raw almonds
1 cup flaked oat
1/4 teaspoon sea salt
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/3 cup coconut oil, the liquid (or canola)
1/2 medium banana
1/3 cup raisin
Directions
- Preheat oven to 350 degrees.
- Place the dates and vanilla in a food processor or blender high speed until smooth, about 1 minute. Add the almonds until smooth, a minute or less.
- Add oats, salt, cinnamon, baking soda, and oil, and process for a few minutes. You may have to stop periodically to scrape the sides in order to get the mixture to mix evenly. Add in banana for 10 seconds.
- Add the raisins.
- Form the dough with a spoon in 2 trays 20 cookies on lightly greased baking sheet and flatten slightly with a spatula.
- Bake for 8-10 minutes or until edges are lightly browned.
- Place on a wire rack to cool and store uneaten cookies in an airtight container.
